Classic Wonton Soup

Makes about 60 – 70 wontons

Wonton & Filling
1 package of THIN wonton wrappers
0.6 lb. of ground pork
2 Tbsp. Tapioca Flour
2 Tbsp. filtered water
2 1/2 Tbsp. Asian sesame oil
2 teaspoons kosher salt
1 1/2 cups napa, chopped
(+ 1 tsp. kosher salt; + tsp. sesame oil)
10 shiitake mushrooms, chopped
(+ 1 tsp. sesame oil)
12 shrimp, cut into small pieces
1 bunch green onions, chopped

Soup for Wontons
olive oil
green onions
filtered water
sea salt (use generously)
white pepper (a pinch or two)
